Ginger vodka jam

Ingredients for 1 servings:

  • 300 g ginger, pickled in vodka
  • 1,200 g orange juice
  • 800 g gelling sugar 2:1

Working time approx. 15 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 20 minutes

The pickled ginger is left over from the production of “Ginger Liqueur with Sage”: http://www.chefkoch.de/rezepte/2843471436374656/Ingwerlikoer.html. Before throwing it away, you can make jam out of it. To do this, strain the pickled ginger through a sieve. Add a little orange juice to the ginger and puree with a hand blender. Transfer everything to a larger pot, top up with the remaining orange juice, and bring to a boil. Stir in the gelling sugar. Let it simmer for about 3 minutes. Test for settling. Pour the jam into the previously rinsed jars. Close the lids and turn the jars upside down. This jam tastes great with savory cheeses and grilled dishes.
