Gingerbread men

Ingredients for 12 servings:

  • 150 g brown sugar
  • 130 g butter, soft
  • 1 egg(s)
  • 200 g honey
  • 2 tbsp water
  • 500 g flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 3 tsp gingerbread spice
  • 200 g powdered sugar
  • 1 pinch of salt
  • 1 egg white
  • Food coloring (e.g. red, green, black)

Instructions

Working time approx. 50 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 10 minutes; Total time approx. 3 hours

Beat the sugar and butter until fluffy. Then beat in the egg for about two minutes. Then stir in the honey for two to three minutes. Gradually mix in the water. In another bowl, combine the flour, gingerbread spice, baking powder, baking soda, and salt. Gradually knead the first mixture with the flour mixture until a smooth dough forms. Divide the dough, shape each into a flatbread, and wrap in plastic wrap. Then refrigerate for one to two hours. Roll out the dough on a floured surface and cut out gingerbread men using a cookie cutter. Place the gingerbread men on a baking sheet lined with baking paper. Bake in a preheated oven at 180 degrees Celsius for about ten minutes. Allow the finished gingerbread men to cool. For decoration, make royal icing. Beat egg whites with salt until stiff peaks form. Then add half of the powdered sugar and stir in. Then stir in the second half of the powdered sugar for two to three minutes. Put some of the white icing into a piping bag, outline the men, and add dots for the eyes and sleeves. Divide the remaining icing into three portions. One of the portions can be smaller. Now color the icing with a drop each of red, green, and black food coloring. You can now decorate the gingerbread men as desired with the colored icing (see video for an example).
