Ingredients for 1 servings:
- 100 g almonds
- 30 g yeast flakes
- 15 g breadcrumbs
- 1 tsp salt
- 2 pinches of white pepper

First, the almonds need to be skinned (blanched). Blanch the almonds briefly in boiling water and then rinse them with cold water. This makes peeling the almonds very easy. You can skip this step if you buy peeled almonds, but I personally don’t mind peeling the skins. Then either roast the almonds briefly in the oven at 180°C for 5 minutes, or briefly place them in a pan (no oil or anything else!) and roast for 5 minutes. Now, blend the almonds and all the other ingredients in a blender, and that’s it. The “Parmesan” will keep well in the refrigerator for 1-2 weeks.
