Gingerbread muffins

Ingredients for 1 servings:

  • 150 g flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 pinch of salt
  • 100 g almond(s), ground
  • 2 tbsp gingerbread spice
  • 2 eggs
  • 2 tbsp honey
  • 2 tbsp cane sugar
  • 100 g butter
  • 200 ml milk
  • 100 g dark chocolate
  • 200 g dark chocolate coating
  • 12 almonds, peeled

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Combine flour with baking powder, baking soda, salt, almonds, and gingerbread spice. Whisk eggs with honey, brown sugar, butter, and milk. Finely chop the chocolate and stir into the egg mixture. Add the flour mixture and gently fold in. Pour the batter into a prepared muffin tin or paper baking cups. Bake in a preheated oven at 200°C for approximately 20-25 minutes. Melt the chocolate coating in a water bath and spread evenly over the muffins. Place an almond on top of each muffin while the glaze is still wet.
