Ingredients for 4 servings:
- 3 egg yolks
- 50 g sugar
- 100 g gingerbread, crumbled
- 1 tsp gingerbread spice
- 250 ml cream
Instructions
Working time approx. 20 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 20 minutes
Beat the egg yolks with sugar and gingerbread spice until frothy. Chop or crumble the gingerbread and stir in. Whip the cream and fold in. Place the mixture in a metal bowl in the freezer and chill for about 3 hours. Or pre-freeze in an ice cream maker according to the instructions and then place it in the freezer for about 1 1/2 hours. Serve with toasted almond flakes and Christmas cookies, or with chocolate sauce or fruit (e.g., warm plum compote). The parfait mixture can be flavored with a little rum, if desired.
