Gisa's chocolate sponge cake

Ingredients for 1 servings:

  • 180 g sugar
  • 6 eggs
  • 180 g flour
  • 60 g cornstarch (Mondamin)
  • 20 g cocoa powder, real
  • 1 tbsp baking powder
  • 1 tbsp vanilla sugar

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 10 minutes

Preheat the oven to 160°C (top/bottom heat). Either grease the springform pan with butter and line it with breadcrumbs, or line it with baking paper as I do. Beat the sugar and eggs until fluffy (at least 20 minutes) until the mixture is glossy and compact. Mix the flour, Mondamin, cocoa powder, and baking powder and fold into the egg/sugar mixture. Bake in a hot oven on the middle rack for about 40 minutes. The sponge cake is ready when it no longer crackles when pressed with a finger. I wish you the best of luck! For a Black Forest cake, you can add a good pinch of cinnamon to the batter.
