Glazed pork loin

Ingredients for 4 servings:

  • 1 onion(s)
  • 1 celeriac
  • 2 small carrots
  • 1 kg pork (boneless pork loin)
  • 3 tbsp oil
  • salt and pepper
  • 200 ml meat broth
  • 350 ml wine, white, dry
  • 3 tbsp jam (orange jam)

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Preheat the electric oven to 200 degrees Celsius. Peel and dice the onion. Trim and dice the celery and carrots. Rub the meat with salt and pepper. Heat the oil in a roasting pan, sear the meat all over, remove it, and sear the vegetables. Deglaze with stock and wine, and simmer for 20 minutes. Add the meat and braise in the covered roasting pan for 35 minutes. Mix the jam with the wine and brush it over the meat 15 minutes before the end of the roasting time. Slice the meat. Strain the sauce through a sieve and season to taste.
