Gluten-free waffles

Ingredients for 4 servings:

  • 3 eggs
  • 50 g butter or margarine
  • 50 g sugar
  • 120 g corn flour
  • 180 g potato starch or corn starch
  • 1 tsp baking powder
  • ½ tsp salt
  • 350 ml milk, soy milk or oat milk

Instructions

Working time approx. 10 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 55 minutes

simple, crispy waffles

Combine eggs, butter/margarine, sugar, and salt in a bowl. Don’t forget the salt, or the potato starch will ruin the taste. Beat everything together with a hand mixer. Add cornflour, potato starch, and baking powder. If you use cornstarch, the waffles won’t be as crispy. Mix the ingredients together. Gradually add the milk and mix. The batter will be quite runny. Let the batter stand for 30 minutes to thicken slightly. The waffles can also be baked immediately. Make sure to grease a non-stick waffle iron if you’re using milk or starch. Otherwise, the waffles will stick. I do this once before turning on the waffle iron.
