Gnocchi casserole with ham and peppers

Ingredients for 4 servings:

  • 500 g gnocchi
  • 2 bell peppers, red and green
  • 1 onion(s)
  • 100 g ham
  • 1 small can of corn, approx. 150 g
  • 2 eggs
  • 150 ml whipped cream
  • 4 tbsp breadcrumbs
  • 6 tbsp cheese, grated
  • Butter for frying and for the dish
  • salt and pepper
  • e.g. basil

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 55 minutes

Cook the gnocchi in salted water according to the package instructions, then drain and let cool slightly. Finely dice the bell peppers and onion. Cut the ham into strips. Drain the corn. Fry the onions in a little butter until translucent, then let cool. Mix the eggs with the cream and season with salt and pepper. Mix the gnocchi with the ham, onions, bell peppers, and corn. Fold in the breadcrumbs and 3 tablespoons of cheese. Grease a baking dish. Add the gnocchi, pour over the egg mixture, and sprinkle with the remaining cheese. Bake in a preheated oven at 170°C (circulating air approx. 190°C top/bottom heat) for about 30 minutes. Decorate the casserole with basil and serve. Tips: This casserole is delicious even without ham. Mushrooms also go very well with it.
