Aunt Erika's spinach casserole

Ingredients for 2 servings:

  • 450 g leaf spinach, frozen
  • 1 package of bacon cut into strips
  • 1 sachet of mashed potato powder
  • 200 g Gouda, grated
  • salt and pepper
  • Oil for the casserole dish

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 20 minutes

Leaf spinach, bacon, mashed potatoes and cheese, simply delicious.

Cut the bacon into thin strips and fry in a pan until lightly browned. Add the thawed spinach and season with salt and pepper. Be careful not to use too much salt, as the bacon is already very flavorful. Meanwhile, make the mashed potatoes according to the package instructions, ideally seasoning with salt, pepper, and nutmeg as well. Grease a baking dish with a little oil. First, spread the spinach and bacon in the dish. Add the mashed potatoes on top and sprinkle with grated cheese. Bake in a preheated oven at 200°C for about five minutes, until the cheese has melted. Note: This is a very quick and delicious recipe. If you have more time and the desire, you can also make the mashed potatoes yourself using fresh potatoes.
