Gnocchi with dried tomatoes and oyster mushrooms

Ingredients for 2 servings:

  • 1 kg gnocchi
  • 3 tomatoes, dried in oil
  • 1 small onion(s)
  • 200 g oyster mushrooms
  • 7 basil leaves, fresh
  • salt and pepper
  • Clarified butter, butter or oil for frying
  • possibly cheese, e.g. Parmesan

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes

Heat the clarified butter in a large pan, add the gnocchi, and fry until golden brown. Meanwhile, in another (smaller) pan, fry the mushrooms in a little clarified butter. When the gnocchi have the right color, add the diced onion and sun-dried tomatoes and sauté. Stir in the mushrooms and season with salt and pepper. If you like, add a little more cheese (e.g., Parmesan). Before serving, finely chop a few basil leaves and stir in. Other types of mushrooms, such as king oyster mushrooms, can also be used.
