Tomato and onion pan on farmhouse bread with fried egg

Ingredients for 4 servings:

  • 1 bunch of chives
  • 4 large tomatoes
  • 8 eggs
  • 8 slices of farmhouse bread
  • 2 onions
  • 6 tbsp oil
  • 2 tbsp butter
  • e.g. salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Peel the onions and slice them into rings. Wash the chives and cut them into rings. Wash the tomatoes and slice them. Heat 2 tablespoons of oil. Fry the onions, then remove them. Heat 2 tablespoons of oil and fry the tomatoes. In another pan, heat 2 tablespoons of oil and cook the fried eggs. Toast the slices of bread and brush with butter. Place the tomatoes, onions, and fried eggs on top. Season with salt and pepper and garnish with chives.
