Gnocchi with spinach and Gorgonzola sauce

Ingredients for 2 servings:

  • 250 g gnocchi
  • 250 g leaf spinach, frozen
  • 1 tbsp butter
  • 1 small onion(s)
  • 250 liters of milk
  • 75 g cream cheese spread
  • 150g Gorgonzola
  • 1 tomato(s), diced
  • salt and pepper
  • nutmeg

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Cook the gnocchi in plenty of boiling, salted water (takes about 3 minutes). Sauté the unthawed spinach with the butter and a small onion. Pour in the milk and add the cheese, cut into small pieces, and stir until the mixture becomes saucey. Dry white wine can be added to taste. Wash the tomatoes, remove the blossom ends, and dice them. Add to the sauce along with salt, pepper, and a little nutmeg. Arrange the drained gnocchi on plates and spoon the spinach and Gorgonzola sauce into the center. Decorate the sides of the plate with freshly ground pepper and enjoy this quick, delicious meal in peace.
