Gnocchi with vegetables, bacon and sour cream

Ingredients for 2 servings:

  • 1 leek
  • 3 carrots
  • 2 garlic cloves
  • 2 tbsp oil
  • 1 shot of white wine, works without if children are eating with you
  • 150 g bacon, finely chopped
  • 600 g gnocchi
  • 1 cup sour cream
  • 1 tsp, heaped lovage powder
  • some salt and pepper

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

easy and fast

Cut the leek into thin rolls. Peel the carrots and use a peeler to “peel” them lengthwise, like wide noodles. Finely chop the garlic cloves. Heat 1 tablespoon of oil in a pan. Add the leek, carrots, and garlic and sauté for a few minutes. The carrots can still be firm to the bite. Then add a splash of white wine and simmer briefly. Remove the vegetables from the pan. Add the bacon to the pan and fry briefly. Then add 1 tablespoon of oil and the gnocchi and sauté for a few minutes. The gnocchi should not brown. In the meantime, mix the sour cream with the lovage. Return the vegetables to the pan and add the sour cream. Season the dish with a little salt and pepper, if desired. Be careful, the bacon is already salty.
