Goat cheese in rosemary, orange and honey

Ingredients for 12 servings:

  • 1 sprig(s) rosemary
  • 3 orange(s), untreated
  • 3 tbsp honey (acacia honey)
  • 12 pieces of goat’s cheese, 35 g each

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Pluck 2 tablespoons of rosemary from the stem. Peel 1 orange thinly, leaving as little of the bitter white inner pith as possible. Cut the peel into very thin shavings. Squeeze 1/4 l of juice from the orange and pour it through a fine sieve. Boil the juice with the rosemary in an uncovered saucepan over medium heat for 8-10 minutes until reduced by half. Add the orange shavings during the last 2 minutes. Let cool, then stir in the honey. Pour over the cheese and serve.
