Ingredients for 4 servings:
- 200 g flour
- 1 pinch of salt
- 1 small egg(s)
- 100 g butter, cold
- 300 g goat’s cheese
- 75 g cane sugar
- 2 orange(s) , (peel)
- 2 lemons, (peel)
- 2 tbsp rum
- 2 tbsp honey
- Fat for frying
Instructions
Working time approx. 40 minutes; Total time approx. 40 minutes
Place flour on a work surface, mix with salt, and make a well in the center. Cut cold butter into small pieces around the well, place an egg in the center, and add about 50 ml of lukewarm water. Chop everything thoroughly with a knife to form small crumbs. Quickly knead with your hands until doughy, shape into a ball, wrap in plastic wrap, and chill for about 30 minutes. Roughly crush the cheese. Grate the orange and lemon zest. In a bowl, carefully mix together the sugar, rum, cheese, and grated zest. Roll out the dough thinly and cut out 8 circles about 10 cm in diameter. Place a little of the cheese mixture in the center of each circle, fold the dough into a semicircle, brush the edges with a little water, and press together with a fork. Heat the frying oil in a deep fryer to 180°C. Add the parcels in batches and let them brown for about 2 minutes. Remove and let drain. Arrange on plates and drizzle with honey.
