Goat cheese – Parfait …

  • 2 Egg yolk
  • 0,5 packet Vanilla sugar
  • 1 tablespoon Summer blossom honey
  • 30 g Goat cream cheese
  • 125 g Whipped cream
  • 1 packet Cream stiffener
  • 0,5 packet Vanilla sugar
  • 30 g Amarettini almond biscuits

… to Marsala – figs

  • 1 Fig fresh
  • 100 Milliliters Marsala dessert wine
  • 3 Tablespoon (level) Sugar

Serving

  • Amarettini finely crumbled
  • Lemon balm fresh

Goat cheese – Parfait …

  1. Stir egg yolks with vanilla sugar and honey over a hot water bath until creamy. Remove from the water bath and stir cold. Stir in the goat cream cheese. Whip the cream with the cream stabilizer and vanilla sugar until stiff and fold in carefully.
  2. Pour the mixture into small silicone molds and place in the freezer overnight.
  3. Put the amarettini in a freezer bag and crumble very finely with the rolling pin. Put on a plate.
  4. Take the parfait out of the freezer, carefully press it out of the mold and let it thaw for a moment. Turn in the crumbled amarettini. Place on a plate and return to the freezer until ready to be eaten.

  1. Mix the marsala with the sugar until the sugar has dissolved, bring to the boil and reduce to a syrupy level over a low flame. Let cool down.
  2. Wash and dry the fig. Cut off the stem end and cut the fig into eighths. Place in a bowl, pour the syrup over it and mix with the fig.

Serving

  1. Let the parfait thaw a little. Place finely crumbled amarettini on a dessert plate. Put parfait on it. Marsala – add the figs. Garnish with lemon balm.
