Goat cheese with a honey-date-nut crust

Ingredients for 2 servings:

  • 1 goat cheese, a roll of about 250 g.
  • ½ baguette(s)
  • 40 g nuts (walnuts, macadamia nuts)
  • 8 dates, dried
  • 3 tsp, heaped honey
  • Thyme
  • Salt

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Cut the baguette into slices and lightly toast. Slice the goat cheese according to the number of baguette slices. Place one slice of goat cheese on each baguette slice. Roughly chop the nuts and dice the dates. Wash the thyme and shake dry, pick off the leaves and roughly chop. Mix the dates, nuts, thyme, honey, and a pinch of salt well. Spread the mixture on the goat cheese and press down lightly. Place in a baking dish. Bake in a preheated oven at 175°C (fan oven) for 10-15 minutes, until the honey caramelizes and the cheese melts slightly.
