Gofio mousse

Ingredients for 4 servings:

  • 100g gofio
  • 50 g ground almonds
  • 150 g cream
  • 4 tbsp condensed milk, sweetened (leche condensada)
  • 2 eggs
  • 2 tbsp sugar

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

Gofio mush

Whip the cream until stiff. Separate the eggs and whisk the egg whites until stiff. Whisk the gofio, almonds, sweetened condensed milk (leche condensada), egg yolks, and sugar together, then gently fold in the whipped cream and stiff egg whites. Refrigerate. Serve cold. If you prefer it less sweet, omit the sugar.
