Ingredients for 1 servings:
- 900 g gooseberries
- 100 g syrup (elderflower syrup)
- 1 dashes lime juice
- 5 mint leaves (large leaves)
- 500 g gelling sugar (2:1)

Remove the stems from the gooseberries and place them in a blender along with the syrup, lime juice, and mint leaves. Bring the pureed mixture to a boil with the preserving sugar and simmer for about 4-5 minutes. Pour everything into jars, seal, and let cool. Adjust the mint according to your desired intensity, depending on how strong you want the flavor. I used Swiss mint, and it tasted like a hint of mint.
