Gouda – cucumber – salad

Ingredients for 4 servings:

  • 350 g cheese (Gouda)
  • ½ cucumber(s)
  • 2 gherkins
  • ½ small jar of pickled gherkins (mustard pickles)
  • ½ onion(s), red
  • 2 tbsp cucumber juice
  • 2 tbsp vinegar (wine vinegar or fruit vinegar)
  • 4 tbsp oil (sunflower oil)
  • Salt and pepper, black from the mill
  • Sugar
  • dill
  • Parsley

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cheese – cucumber – salad, vegetarian and very tasty

Cut the Gouda and cucumbers into thin, roughly equal-length strips and mix together. Dice the onion and scatter over the salad. Mix the cucumber juice, oil, vinegar, and spices into a marinade and drizzle over the salad. Chop the herbs and sprinkle over the salad. Let it marinate for a while and serve at room temperature. It’s perfect for buffets, or simply serve with fresh bread and butter.
