Ingredients for 8 servings:

  • 2 kg potatoes
  • 2 kg sauerkraut
  • 1 kg smoked meat (possibly smoked pork or mettwurst)
  • Salt
  • Juniper berry(s)
  • bay leaves
  • Spice(s), to taste

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

Sauerkraut soup with potatoes and smoked meat

Boil the potatoes in their boiled or jacket potatoes until soft, drain the water, and mash them into a mash. Add the smoked meat and sauerkraut to the water, season with juniper berries, bay leaves, and salt, and simmer until tender. Remove the meat from the pot. Mix the mashed potatoes in the pot with the broth and the sauerkraut to make a creamy soup. Chop the meat into small pieces and serve on the Gräwes (a kind of gravy). Serve with hearty farmhouse bread.
