Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour
For the applesauce, peel the apples, remove the cores, and cut the fruit into small pieces. Pour five tablespoons of water into a small saucepan, just enough to cover the bottom, and add the apple pieces. Cover and bring the mixture to a boil. Let it simmer for two to four minutes (depending on the type of apple; the pieces should still be visible). Remove from the heat. Preheat the oven to 180–190 degrees Celsius (350–375 degrees Fahrenheit). For the dough, place all the ingredients (the butter must be cold, otherwise the dough won’t be crumbly enough) in a mixing bowl and knead lightly with a mixer (dough hook) until you have a crumbly dough. This only takes one to two minutes. Butter a 26 cm diameter springform pan and press four-fifths of the dough into it, creating a small rim of about two centimeters. Pour in the applesauce and smooth the surface. Sprinkle with the vanilla sugar. Sprinkle the remaining dough crumbs on top. Bake the cake for 20 to 30 minutes, then let it cool in the pan. It tastes great with whipped cream. Tip: You can also fill the cake with other fruit, such as cherries. To do this, place a jar of cherries with their juice in a saucepan and thicken with a packet of vanilla pudding. Pour the mixture onto the cake like you would applesauce, then scatter the remaining crumbs on top.
