Ingredients for 1 servings:
- 320 g margarine
- 280 g sugar
- 2 pinches of salt
- 2 packets of vanilla sugar
- 520 g flour
- 6 tsp baking powder
- 400 ml milk
- 2 apples
- 200 g raisins, more or less if desired
- 200 g desiccated coconut, more or less if needed

Beat the margarine, sugar, salt, and vanilla sugar until fluffy, then alternately stir in the flour mixed with baking powder and the milk. The batter shouldn’t be stiff. Depending on the flour you use, you may need to add a little more milk. Peel, halve, and core the apples. Dice them and add them to the batter. Then stir in the raisins and desiccated coconut and mix everything again. Pour the batter into a tin and bake the cake at between 160 and 170°C on the second rack from the bottom for about 60 minutes. The batter needs to be cooked through, but the cake shouldn’t brown too much; it should stay light in color. Otherwise, it could quickly become too dry.
