Ingredients for 1 servings:

  • 250 g flour
  • 125 g butter, soft or margarine
  • 80 g sugar
  • 1 egg(s)
  • some lemon peel
  • 1 kg quark
  • 8 eggs
  • 300 g sugar
  • 1 cup of sweet cream
  • 2 tbsp flour
  • Mandarin(s) or peaches

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Mix all dough ingredients into a shortcrust pastry. Press the dough into the springform pan, forming a rim approximately 3 cm high. Prick the base several times with a fork. In a bowl, combine the sugar, quark, 8 eggs, and 2 tbsp. flour with a hand mixer. Whip the cream until stiff peaks form and carefully fold into the mixture. Spread the drained mandarin oranges or peaches over the shortcrust pastry and pour the quark mixture over it. Bake on the lowest oven rack for approximately 70-90 minutes at 150°C (300°F). After baking, let the cheesecake stand in the oven with the door slightly open for about 30 minutes to cool slightly. (The cheesecake will not sink.)
