Ingredients for 1 servings:

  • 50 g butter
  • 3 tbsp sugar
  • 1 pinch of salt
  • 250 g flour
  • 1 tbsp baking powder
  • 100 ml milk
  • Fat for the mold
  • 625 g quark
  • 25 g butter
  • 6 tbsp sugar
  • 2 eggs, separated
  • 6 tbsp sour cream
  • 4 tbsp flour
  • ½ organic lemon(s), juice and zest

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 20 minutes

classic, flat cheesecake

Cream the butter with sugar and salt until light and fluffy, then stir in the flour and milk to form a smooth dough. Press into a greased springform pan, forming a rim about 4 cm high. For the topping, cream the butter with the sugar until light and fluffy, then gradually stir in the egg yolks and sour cream, quark, flour, lemon juice, and lemon zest. Finally, fold in the beaten egg whites. Pour onto the batter and bake at 180°C (top/bottom heat) for about 45-60 minutes. The cheesecake will have a firmer consistency and a lovely lemony flavor, not vanilla-y.
