Ingredients for 1 servings:

  • 330 g butter
  • 8 eggs, separated
  • 500 g sugar
  • 2 packets of vanilla sugar
  • 1 lemon(s)
  • 200 ml cognac
  • 300 g hazelnuts or almonds, ground
  • 330 g flour
  • 2 packets of baking powder
  • 4 tsp cocoa powder
  • Fat for the mold
  • possibly cake icing (chocolate glaze) or
  • powdered sugar

Mix the butter, sugar, egg yolks, vanilla sugar, flour, hazelnuts, cognac, and cocoa powder for about 10 minutes until smooth. Squeeze the lemon juice and add it to the egg whites, beating until stiff peaks form, then fold it into the batter. Pour the mixture into a large, buttered springform pan and bake at 125°C – 150°C for 1 to 1 1/4 hours. The cake can be decorated with powdered sugar or chocolate glaze, but it’s not necessary; it tastes delicious as it is.
