Ingredients for 4 servings:

  • 500 g minced meat, mixed
  • 1 large onion(s), finely chopped
  • 2 large eggs
  • 2 slices white bread, without crust
  • Milk
  • 2 tbsp sage, finely chopped
  • 1 ½ tsp salt
  • 1 tsp curry powder
  • ½ tsp pepper
  • 1 tsp nutmeg
  • 250 ml water
  • 5 cloves
  • 5 peppercorns
  • 1 bay leaf
  • 75 g butter

Instructions

Working time approx. 15 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 15 minutes

Pour a little milk over the white bread and let it soak. Then squeeze it out well and mix it with the minced meat, onions, eggs, sage, salt, curry powder, pepper, and nutmeg. Let the minced meat dough rest in the refrigerator for 3 hours. Then, with wet hands, form four equal-sized balls. Melt the butter in a pan. Brown the balls on all sides, turning them gently. Pour in the water and add the spices. Simmer over moderate heat for 20 minutes. Arrange the finished balls on a platter and sprinkle with some chopped sage. These balls were always served with my great-grandmother’s Dutch carrot mash.
