Ingredients for 2 servings:
- 500 g wheat flour type 405
- 500 g spelt flour
- 2 tsp salt
- 2 carrots or zucchini; potatoes are also suitable
- 2 tbsp olive oil
- 1 cube of yeast
- n. B. water
- 6 tbsp mixed seeds, e.g. flax seeds, sunflower seeds, pumpkin seeds, oat flakes
- 1 egg yolk
- some milk

Soak the grain mixture in a large cup of hot water. It’s best to let it stand overnight or soak it a few hours before making the dough. The exact amount of water isn’t important, as more will be added later. Peel and grate the carrots or zucchini. Weigh the flours and mix them with the salt in a large mixing bowl. Dissolve the yeast in about 350 ml of water. Don’t worry, the dough definitely needs this amount of water, and most likely more. Knead the oil, soaked grains, carrots or other vegetables, and yeast water into the flour and salt mixture. Depending on the vegetables used and the amount of water used to soak the grains, you’ll need about 200–500 ml of water at this point until you have a sticky but pliable dough. If the dough is already too runny, simply knead in a little more flour. Let the dough rise for about 20 minutes, until it has risen nicely. Then fill two loaf pans lined with baking paper. I use 26 cm pans. Preheat the oven to 220°C. While the dough is preheating, let it rest and whisk an egg yolk with a little milk. As soon as the oven has reached the right temperature, brush the bread with the egg and make a small cut in the middle. Bake for 30 minutes at 220°C. Then reduce the oven temperature to 175°C and bake for another 45-60 minutes. My grandmother always baked this bread for her children, and my mother has now passed it on to me. It’s a moist seed bread with a great crust. The carrots or zucchini make it extra moist, and you can also eat it without any toppings. This amount is enough for two loaves.
