Grandma's plum jam

Ingredients for 4 servings:

  • 1 kg plum(s) / damsons
  • 200 g sugar
  • 1 cinnamon stick(s)
  • 1 allspice berry
  • Whiskey or rum (a little)

Instructions

Working time approx. 2 hours; Total time approx. 2 hours

Wash the plums, remove the stones, and cook briefly over low heat without adding water. Then place them in a roasting pan in the oven or a large saucepan, add the spices, and stir in about 1/3 of the sugar. Bake the plums in the oven at 150°C (top/bottom heat) for about 20 minutes without stirring. Leave the oven door slightly ajar (hold a spoon in place). Then stir in the second third of the sugar and let it cook for another 20 minutes. After adding the remaining sugar, after about an hour, taste the jam. Season again with sugar if desired and return it to the oven. Once the jam has cooked long enough, pour it into hot, rinsed jars or a clean stoneware pot. Add a shot of whiskey or rum to the top and seal with foil or a lid.
