Grandma's red cabbage salad

Ingredients for 10 servings:

  • 1 kg red cabbage
  • 2 tsp, leveled salt
  • 1 large onion(s), finely chopped
  • 6 tbsp sugar
  • 1 cup whipped cream, 200 g
  • 1 tbsp olive oil
  • 2 tbsp balsamic vinegar, light, or herb vinegar
  • some pepper

Instructions

Working time approx. 30 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 30 minutes

Finely grate the red cabbage in a food processor and knead it with the salt. Let it rest for 2 hours (drain the water), then squeeze it dry in a kitchen towel. While it’s waiting, mix the dressing with finely chopped onion, sugar, heavy cream, oil, and vinegar with a little pepper. Add the drained red cabbage to the dressing and mix. Season to taste with vinegar, sugar, and pepper.
