Ingredients for 1 servings:

  • 2 eggs
  • ¾ cup sugar
  • 1 cup flour
  • 1 tsp, leveled baking powder
  • 6 tbsp oil
  • 2 vanilla sugar
  • 1,000 g apples, firm, sour
  • Butter, for drizzling
  • Sugar, for sprinkling

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Cut the peeled apples into large pieces. Beat the eggs and sugar with a whisk or hand mixer until thick and creamy. Gradually and carefully fold in the flour sifted with the baking powder. Finally, quickly and vigorously beat in the oil and pour the thick mixture into a greased springform pan. Distribute the apple pieces on top (there should be no trace of the batter left), sprinkle with vanilla sugar, and bake the cake in the preheated oven at medium heat for about 45 minutes (bake slowly so it doesn’t rise too quickly). The cake is ready when the pastry peaks that have “popped” from between the apple pieces are golden brown. Drizzle with melted butter and sprinkle with sugar.
