Ingredients for 1 servings:
- 1 egg(s), size M, better size L
- 1 pot of soy yogurt (yogurt alternative) or fruit yogurt of your choice, approx. 150 g
- 100 g sugar
- 2 tbsp sunflower oil or safflower oil
- 160 g flour
- 1 tsp baking powder
- 1 tsp. baking soda
- 50 g almonds, chopped or other nuts
- 100 g grapes

with yogurt, diet-friendly, quick to make, about 12 muffins
First, beat the egg with a fork in a bowl, then add the yogurt, sugar, and oil. Mix everything well with a fork and set aside. In another bowl, mix the flour with the baking powder and baking soda, add the chopped almonds (or hazelnuts, pistachios, etc.) and, depending on their size, halved or quartered grapes. Now combine the two contents and stir with a spoon until the dry ingredients are moistened. Do not mix with a mixer or anything similar. Pour the batter into baking cups or a muffin tin and bake at approximately 160°C – 170°C (convection oven) for about 30 minutes. Every oven is different! So be sure to keep an eye on the baking time and temperature, and adjust as needed! I always make 12 muffins from this recipe. These turn out relatively small. So if you prefer larger muffins, just make 8-10 or increase the amount of batter. Depending on the type of yogurt, you can always adjust the flavor. If you use a relatively neutral yogurt, it might be advisable to add a little flavoring of your choice. For 12 muffins, each one has 145 kcal.
