Gratinated chicory with ham

Ingredients for 2 servings:

  • 4 chicory
  • 4 slices of cooked ham, optionally with peppercorn rim
  • 200 ml vegetable broth, instant
  • 3 tbsp crème fraîche, or sour cream
  • 1 tbsp flour
  • 1 tbsp butter
  • Salt and pepper, from the mill
  • 125g mozzarella
  • ½ bunch chives
  • Fat for the mold

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 55 minutes

Preheat oven to 180°C (top/bottom heat). Grease a baking dish. Wash the chicory and blanch it in boiling salted water for 3 to 4 minutes. Drain, wrap it in ham, and place it in the baking dish. Melt the butter and sauté the flour until light brown. Pour in the stock and crème fraîche. Mix well with a whisk. Bring to a boil briefly and pour over the chicory. Season with pepper. Arrange the mozzarella in thin slices on top. Place in the oven and bake for 20-25 minutes. Sprinkle with chives and serve.
