Gratinated schnitzel

Ingredients for 4 servings:

  • 1 bell pepper(s), red
  • 1 bell pepper(s), yellow
  • 1 bell pepper(s), green
  • 4 pork schnitzels, each 150 g
  • salt and pepper
  • 2 tbsp oil
  • 150 ml vegetable stock
  • 100 g chips (tortilla chips)
  • 100 g cheese, grated
  • Basil for garnishing
  • e.g. tomato sauce

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Clean the bell peppers and cut into strips. Halve the schnitzels. Heat oil in a pan and fry the schnitzels over high heat until golden brown. Season with salt and pepper and remove. Add the bell pepper strips to the frying fat and fry for about 5 minutes. Deglaze with vegetable stock, stir in the tomato sauce, and let it reduce for about 5 minutes. Place the schnitzels in an ovenproof casserole dish. Pour the bell pepper sauce over them. Sprinkle with tortilla chips and cheese. Bake in a preheated oven at 225°C (top/bottom heat: 200°C) for about 7 minutes. Remove from the pan and serve garnished with fresh basil leaves.
