Ingredients for 1 servings:
- 1 cup cottage cheese, low fat
- 1 handful of cherry tomatoes
- 1 tbsp balsamic vinegar, or pear balsam
- 2 spring onions
- 1 handful of mushrooms
- salt and pepper
- possibly salt (mozzarella salt)
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Dice the tomatoes and mushrooms and slice the spring onions into rings, place them in a bowl, and mix. Then add the balsamic vinegar (I used pear balsamic vinegar) and season with salt and pepper (mozzarella salt works too). Finally, add the cottage cheese. Mix everything well. It’s especially delicious with poultry. This makes a protein-rich dinner and tastes fantastic.
