Greek Omelette

Ingredients for 2 servings:

  • 1 onion(s), red
  • 2 pointed peppers
  • 2 tomatoes
  • 1 tbsp parsley, chopped
  • 6 eggs
  • 100 g feta cheese
  • possibly olives
  • salt and pepper
  • olive oil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Greek omelet

Slice the onion and bell pepper into strips and roughly dice the tomatoes. Crack the eggs, whisk them, and season with salt and pepper. Sauté the onions in a little olive oil, then add the bell peppers and cook for 2-3 minutes. Add the tomatoes and sauté briefly. Season with parsley, pepper, and salt, then scatter the eggs over the top. Crumble the feta over the top and cover, letting it set over low heat. If you like, you can also add a few olives. Serve with a fresh lettuce.
