Ingredients for 4 servings:

  • 150 g red bell pepper(s)
  • 6 sprigs of oregano
  • 800 g boiled potatoes
  • 80 g clarified butter
  • 400 g feta cheese
  • Salt and pepper from the mill
  • 1 small jar of green olives, pitted
  • 1 small jar of black olives, pitted
  • n. B. Garlic clove(s), approx. 2 – 4

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Wash and trim the bell peppers and dice them. Rinse the oregano, pat dry, and pluck the leaves from the stems. Peel and finely chop the garlic. Peel and slice the potatoes. Dice the feta cheese. Heat half of the clarified butter in a pan and fry the potato slices until golden brown, stirring occasionally. Season the potatoes with salt and pepper and remove from the pan. Add the remaining clarified butter to the pan. Sauté the garlic and vegetables for about 5 minutes, stirring occasionally, then season with salt and pepper. Add the potatoes, feta, oregano, and olives to the pan, mix, and heat through. Tip: If desired, briefly broil in the oven.
