Ingredients for 4 servings:
- 1 cup rice, large
- 2 chicken breasts
- 1 small jar of black olives, pitted
- 3 onions, roughly sliced
- 200 g feta cheese, diced
- Spice mix for gyros
- Salt and pepper from the mill
- Olive oil for frying
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
First, cook the rice in salted water. Meanwhile, cut the meat into small pieces and rub it with gyro seasoning. Heat olive oil in a large pan and brown the meat. Add the onion wedges and fry until tender. Then stir in the olives. Stir in the cooked rice and season well with salt and pepper. Finally, add the feta cheese and let it sit for a moment. I like to serve this quick pan dish with cucumber salad with sour cream and garlic dressing or with Greek farmer’s salad. Tip: I’ve also used pork schnitzel or turkey breast instead of chicken breast.
