Ingredients for 4 servings:
- 500 g cooked rice (mixed wild/brown rice)
- 1 bell pepper(s), red
- ½ cucumber(s)
- 200 g feta cheese (as WW recipe with 9% fat)
- 1 tbsp tomato juice
- 1 tbsp olive oil
- 1 pinch of salt
- 1 tsp tomato paste
- 1 tsp black pepper, ground
- 1 large apple
- 5 olives, black, cut into rings
- 1 garlic clove(s), crushed
- 1 pinch(s) of sugar

Clean, wash, or peel the bell pepper, apple, and cucumber, and cut into small pieces. Crumble the feta cheese by hand and mix with the crushed garlic. Mix the rice with the tomato juice, olive oil, salt, and sugar, along with the tomato paste, olives, and pepper. Let both mixtures sit for a good half hour and then mix together. As a WW recipe (with 9% feta cheese), this gets 5 points per person.
