Greek Rice with Eggplant and Feta

  • 1 piece Onion
  • 1 piece Eggplant
  • 2 piece Tomatoes
  • 2 piece Garlic cloves
  • 4 tbsp Olive oil
  • Salt and pepper for seasoning
  • 1 pack Uncle Ben’s Express Greek Djuvec rice
  • 1 handful Parsley leaves
  • 100 g Feta


  • Peel the onion, cut in half and cut into wedges. Wash and dice the aubergine. Remove the tomatoes from the stalk and cut into large pieces. Peel and slice the garlic.
  • Heat the oil in a large pan and fry the aubergines in it for about 5 minutes. Season with salt and pepper. Then add the onions, garlic and tomatoes and fry for another 5 minutes. Season everything again with salt and pepper.
  • Heat Uncle Ben’s Express Greek Djuvec rice according to the instructions on the package and serve. Spread the vegetables over it and sprinkle everything with the parsley leaves and the crumbled feta.
  • Tip 4: If you like, you can sprinkle everything with a little olive oil and lemon juice.
