Ingredients for 4 servings:

  • 1 kg beans, green, fresh
  • 1 ¼ liters of water
  • 1 tsp salt
  • 1 tsp savory, shredded
  • 2 tbsp oil
  • 125 g bacon, diced
  • 1 large onion(s), diced
  • 1 tbsp, levelled sugar
  • 200 ml vinegar
  • 1 pinch(s) of pepper

Instructions

Working time approx. 15 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour

as a salad warm or cold and as a vegetable side dish very tasty

Cut the cleaned beans into pieces about 3 cm long. Bring the water to a boil, add the salt, beans, and savory, and simmer for about 10 minutes over low heat. Add fresh savory as a whole sprig to the cooking water and discard after the cooking time is over. Drain the cooking water, leaving the beans in the pot. Heat 2 tablespoons of oil in a pan and fry the diced ham until crispy. Then add the diced onion and stir until lightly golden brown. Be careful not to burn them! Then add the sugar and stir until dissolved. Add the vinegar, cover the pan, and simmer for about 15 minutes over low heat. Pour the mixture over the drained beans, mix well, and let it infuse. Add more vinegar to taste, and season with salt and pepper to taste. The beans are delicious as a warm accompaniment to meatballs and mashed potatoes, but can also be eaten cold as a salad.
