Green beans in tomato sauce as a side dish

Ingredients for 4 servings:

  • 500 g beans, green (princess beans, etc.)
  • 1 clove(s) garlic
  • 1 onion(s)
  • 1 tbsp thyme
  • 1 tbsp rosemary
  • 4 tbsp tomato paste
  • 1 tbsp butter
  • e.g. salt and pepper
  • some water
  • Cornstarch or flour, for binding

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Wash the beans, trim the ends, and set aside. Finely dice the onion and fry briefly in the pot. Add the beans, tomato paste, garlic, and spices, and deglaze with a small glass of water. Cover and simmer the beans until tender. Preparation in a pressure cooker: Bring to a boil briefly, then cook under pressure for about 5 minutes. Once the beans are tender, season again to taste. If you like, you can thicken the broth with starch or flour. I don’t like thick sauces so much, so I try to deglaze with a little water instead of tomato paste. As a variation, you can also use fresh tomatoes instead of tomato paste. Since these contain a lot of water, you then need to use less water to deglaze.
