Green beans with walnut sauce

Ingredients for 6 servings:

  • 1 liter chicken broth
  • 4 tbsp onion(s), finely chopped
  • 2 tsp garlic, finely chopped
  • 2 tsp sweet paprika powder
  • 1 ½ tsp salt
  • 4 tbsp vinegar (red wine vinegar)
  • 3 tbsp coriander, finely chopped (or flat parsley)
  • 125 g walnuts, finely ground
  • 500 g beans, green, fresh, cleaned

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

From the Caucasus

In a large bowl, combine the chicken broth with all other ingredients (except the beans). Cook the green beans uncovered in 3 liters of boiling salted water for about 10 minutes, or until al dente. Drain well in a sieve. Carefully but thoroughly mix into the walnut sauce and season to taste. Let stand for a while (1-2 hours) before serving.
