Ingredients for 1 servings:
- 200 g walnuts
- 6 large eggs
- 800 g quark (low-fat quark)
- 4 tbsp cornstarch, heaped (Mondamin, approx. 100 g)
- 250 g cane sugar
- ½ tsp salt
- ½ tsp vanilla powder OR
- 2 bags of vanilla sugar (Bourbon)
- 1 bag of baking powder (Backin)
- 2 handfuls of lemon balm
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes

Lightly toast and chop the walnuts. Finely chop the lemon balm. Mix all ingredients well and pour into a springform pan lined with baking paper. Bake in a cold oven at 140°C (convection oven) for about 110 minutes. Preheat to approx. 160°C (top and bottom heat) and bake for about 90 minutes. Alteration: Instead of the lemon balm, use lime, green lemon, zest, and juice, but then add at least 1 more teaspoon of Mondamin. It will shrink a little after baking, so what? The cake has a mild, delicate lemon balm flavor. Enjoy.
