Green pea soup

Ingredients for 4 servings:

  • 3 onions
  • 1 head of lettuce
  • 1 bunch parsley, flat
  • 500 g peas, frozen
  • 3 tbsp butter
  • 3 tbsp olive oil
  • 1 ½ liters chicken broth, homemade or instant
  • Salt
  • Black pepper, freshly ground
  • ½ tsp paprika powder, mild or hot

Working time approx. 20 minutes; Total time approx. 20 minutes

Bezelye Corbasi

Peel and finely dice the onions. Wash, trim, and strip the lettuce. Wash the parsley and shake dry. Heat the butter and oil in a saucepan. Add the onions and sauté, then add the remaining vegetables and 350g of the peas. Simmer for 5 minutes. Pour in the stock and cook, covered, for about 20 minutes. Purée everything with a food processor. Add the remaining peas and cook for another 10 minutes. Season with salt and pepper. Serve with flatbread.
