Green ribbon noodles with grilled vegetables

Ingredients for 2 servings:

  • 250 g tagliatelle, green
  • 1 small zucchini
  • 1 small onion(s)
  • 2 cloves garlic
  • 1 red bell pepper(s)
  • 150 g mushrooms
  • 6 tbsp olive oil
  • e.g. Parmesan
  • e.g. salt and pepper
  • 1 tsp sugar

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Deseed the zucchini and cut into small cubes. Dice the onions, garlic, and bell peppers, and slice the mushrooms. Place the vegetables in a large casserole dish, toss with the olive oil, salt, and pepper, and sprinkle with the sugar for a light caramel flavor. Bake in the oven at 250 degrees Celsius for about 20 minutes. Meanwhile, cook the tagliatelle in salted water according to the package instructions until al dente. Toss the vegetables and pasta together and serve with freshly grated Parmesan cheese.
