Green ribbon pasta with leek and salmon

Ingredients for 2 servings:

  • 4 salmon fillets (frozen), thawed
  • 4 stalk(s) leeks
  • 1 tbsp flour
  • 1 tsp salt
  • 1 pinch(s) of pepper
  • 1 pinch of nutmeg
  • 400 ml cream
  • 300 g tagliatelle, green
  • possibly wine, white

a quick, inexpensive and very tasty dish without many ingredients required

Bring the pasta water to a boil with salt and add the tagliatelle pasta. Cut the leek (just the white part) into approximately 1 cm pieces, sauté in a little water, and then puree (with an immersion blender). Add cream (the ideal amount is a matter of taste; I use about 400 ml) and seasonings. Dice the salmon (thawed for about 45 minutes), add it to the prepared leek mixture, and cook for about 5 minutes. If you have some white wine on hand, it makes a wonderful addition to the sauce.
