Ingredients for 4 servings:
- 300 g salmon fillet(s), fresh
- 400 g tagliatelle, green
- 2 shallots
- ½ bunch of dill
- 1 tbsp olive oil
- 200 ml orange juice
- 100 ml cream
- ½ tsp turmeric
- Salt
- Pepper, colored, from the mill
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes
Cook the tagliatelle in plenty of boiling, lightly salted water until al dente, then drain. Dice the salmon fillets, peel and dice the shallots, rinse the dill, shake dry, and chop. Heat the olive oil in a pan and sauté the shallots over medium heat. Add the orange juice and cream and simmer over medium-high heat for about 3 minutes. Season to taste with a little salt, a few grinds of freshly ground pepper, and the turmeric. Add the salmon cubes and cook over low heat for about 5 minutes. Stir in the chopped dill and mix the sauce with the tagliatelle.
