Ingredients for 1 servings:
- 300 g potatoes, cooked, cooled
- some butter
- 1 pinch of salt
- some sugar

Rauchermad dates back to the GDR era and was always available here in Saxony when there were leftover potatoes.
Grate the potatoes. Melt the butter in a non-stick frying pan and press the grated potatoes flat into the pan, about 0.5 cm thick. Use two pans if necessary. Sprinkle a pinch of salt on top and fry on one side until crispy. Shake the pan to make sure the smoked potatoes aren’t sticking to the bottom; if not, carefully loosen them. Place a plate upside down on the pan, turn everything upside down, and remove the pan from the top. Immediately cover the hot smoked potatoes with very thin pieces of butter. This will melt nicely. Sprinkle some sugar on top. Leftover boiled potatoes can be quickly transformed into a sweet treat. Smoked potatoes date back to my childhood.
